Salsa
Ingredients:
6-8 medium tomatoes
1/3 of a large onion
1 lemon
1 lime
1/3 scotch bonnet or habanero pepper
1/4 thai pepper (optional)
1 small cilantro bush
salt
pepper
Preparation:
Dice tomatoes and 1/3 of an onion into very small pieces. Carefully, perhaps using gloves, chop the peppers as finely as possible. Discard the seeds. Finely chop the whole cilantro bush, mostly discarding stems. Mix together in a bowl. Squeeze the lemon and lime, making sure to avoid the seeds. Add salt & pepper to taste. At the end, squeeze the salsa with your hands/mash with a spoon for the correct texture.
Serve with tortilla chips, Mexican food, salads, sandwiches, etc.
